- 2 cups of beets, puree (you can purchase canned beets. if you are using fresh beets, trim, clean and boil until tender. remove skin and puree)
- 2 cups of flour
- 1 1/2 cups of dark brown sugar
- 4 oz semi-sweet chocolate, melted (or 1/2 cup of cocoa powder)
- 2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla
- 1 cup butter
- 3 eggs

In a large mixing bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add the vanilla. Add the beet puree and the melted chocolate at this time, although in the video it shows adding the beets at the end of the process.
In a separate bowl, whisk together flour, sugar, baking soda and salt. If you are using the cocoa powder, add it here.
Stir the dry mixture into the beet batter and combine.
Pour into a 9-inch cake pan and bake at 375 degrees for 40 minutes or until toothpick comes out clean.
